Ultimate Stuffing:  The "Sausage Fatty"

The greatest stuffing you will ever taste, we know that's a bold claim but trust us it's amazing! Introducing the 'Sausage Fatty'!

Ingredients:

  • 1kg of high quality sausage meat
  • 300g of breadcrumbs
  • Thyme
  • Sage
  • A red onion - finely chopped
  • Handful or two of Walnuts - chopped
  • Fennel seeds (pinch)
  • Ground pepper (no salt required!)
  • Rosemary stick for brushing the...
  • Maple syrup
  • 16 rashers good quality streaky bacon

Instructions:

  • Add both your sausage meat and breadcrumbs into a large bowl along with your thyme leaves, finely chopped sage leaves, a diced red onion, chopped walnuts, fennel seeds, and a pinch of pepper.
  • Now with your hands, work all of the contents of the bowl together until completely mixed. 
  • Once you’re happy that all the contents are properly mixed in begin shaping the mixture into a cylinder type shape. Almost like a roasting joint. 
  • Clear your chopping board and lay out individual pieces of bacon, use the back of your knife to stretch out the bacon.
  • Now place all the pieces of bacon on top of each other in a lattice formation by weaving the bacon over and under other pieces. You should have a square formed from 8x8 bacon rashers. 
  • Place your mixture in the middle of your lattice and wrap it up. Tuck the extra bits of bacon on the side underneath the mixture. Now your mixture should be completely covered in the bacon lattice.
  • Brush on some maple syrup over the bacon.
  • Cook at 180C on a baking tray for an hour. Then your stuffing should be ready for all your guests to enjoy.
