We know this sounds crazy but trust us it's amazing.
Ingredients:
- High quality sausages
- Yorkshire pudding batter
- Rapeseed oil
- Sage leaves
Instructions:
- Firstly you need to get your sausages ready, if they're too big put your thumb in the middle and twist, this should create two smaller sausages attached by a tiny point in the middle.
- Cut that middle section and repeat for all your sausages.
- Now that you have the correctly sized sausages, place a sage leaf on each one and wrap in bacon.
- Lay a single sausage in each hole of your tin.
- Then pour a liberal amount of oil in with each sausage.
- The key to good Yorkshire puddings is having really cold batter hitting really hot oil. So you need to put the tin in the Kamado Joe BBQ to get super hot before you add the batter. This also allows the sausages to start cooking as they'll take much longer than the Yorkshire puddings.
- After putting your sausages in the BBQ wait 10 minutes.
- Once the 10 minutes has passed, open the BBQ lid and put the batter in each hole as quick as you can, you’ll want to fill the batter up to just below the top of the hole.
- Close the lid, wait for 30 minutes and your Yorkshire puddings should be cooked.
