Mint Chimichurri

This minty chimichurri pairs well with any meat but we love it with our BBQ Lamb.
Ingredients
- 3 cloves of garlic
- 1 red onion
- Fresh coriander
- A chilli
- Red wine vinegar
- Rapeseed oil
- A lime
- Maple syrup
- Fresh mint
- A generous pinch of salt and pepper
Instructions:
- First you’ll need to remove the skin from the garlic, then you can begin chopping the garlic.
- Once your garlic is well chopped add a little bit of salt and some rapeseed oil. Now start pressing down on the garlic with the side of your knife to create a smooth paste. (see video)
- Scrape your garlic paste off of the board and place into a small bowl.
- Finely dice an onion then add into the same bowl.
- Start chopping your fresh coriander then also add that into the bowl.
- Now you’ll want to start chopping the mint but before this make sure you remove all the woody bits from the mint. Then add the chopped mint into the bowl
- Finely chop a chilli, you can leave the seeds in if you want a bit more of a kick. Then add the chilli into the bowl.
- Now into the bowl add some red wine vinegar, rapeseed oil, a big pinch of salt and pepper, juice of a lime and a big glug of maple syrup, and mix well.
- If you want a smooth paste instead you can put this mixture through a blender but we think it's best with a bit of texture.
