Homemade Flatbreads

These homemade flatbreads are obviously vegetarian, and they make an absolutely amazing side for any dish but we recommend our chicken kebab on the Kamado Joe JoeTisserie. They are so soft and flexible, absolutely delish.
Ingredients:
- 500g of flour
- 1 sachet of baking powder
- A pinch of salt
- 6 heaped tablespoons of yoghurt
- Roughly 300ml of water
- (optional) thyme leaves to mix into the dough
Instructions:
- Pour your flower into a medium sized bowl and create a well in the middle
- Place your baking powder, salt and yoghurt in the middle of the well and begin mixing to thicken
- Once your mixture is thick and lumpy start adding a little bit of water each time and keep mixing. You may not need to use all the water as long as your mixture becomes clumped together.
- As your mixture gets more and more clumped together you should start using your hands to work and knead the bread so that it's soft and fluffy.
- Keep working the bread until all the flour from the bowl is incorporated in the mixture.
- When all the ingredients finally become a single blob of dough remove the dough from the bowl and place on a clean work surface that has been dusted with flour.
- Again you’re going to need to work and knead the bread, you'll know that the kneading is done when your dough becomes smooth and pliable.
- Before rolling and cooking the dough needs to rest for roughly half an hour so wrap it in cling film and leave out for thirty minutes.
- After thirty minutes have elapsed, tear off some dough to create a ball that is slightly smaller than a tennis ball but larger than a golf ball. Then begin rolling.
- Roll the dough out to be nice and thin as the raising agent will make it fluffy anyway. Whilst rolling make sure to regularly add more flour to your work surface so that the dough doesn't stick.
- Once you’re happy with how thin your flatbread is, lay it on a tray in your Kamado Joe grill. Make sure your grill is already hot and is maintaining a steady heat.
- Put the lid down on your grill and leave to cook. After roughly a minute, flip your flatbread over so that both sides cook evenly and leave for another minute.
- Whilst your current flat bread is cooking you can start rolling out your next one.
- You’ll know that your flatbread is properly cooked once you see plenty of grill lines and bubbles form on the bread.
- Repeat these steps until you have enough to feed everyone, and finally enjoy!
