Christmas Turkey smoked on the Kamado Joe

I bet you didn't think about using a BBQ to cook your Christmas dinner this year, but with the Kamado Joe anything is possible. This gives the bird a delicious flavour with a hint of smoke.
Ingredients
- A large turkey
- A block of butter
- Thyme
- An orange
- Nutmeg
- Salt
- Pepper
- Rapeseed oil
- Fennel seeds
- Sage leaves
- Carrots
- Brussel sprouts
- Broccoli
Instructions
- Firstly to properly set up your Kamado Joe for indirect cooking with the slow roller system you will need to add a good amount of high quality charcoal. Make sure you don't overfill your basket. You will want a gap between where the charcoal is and where the slow roller will sit.
- Now get your looftlighter and start your charcoal burning.
- Open the bottom vents of your Kamado Joe, put the top down and open the top vents.
- Once the temperature of your Kamado Joe reaches 150C, partially close the bottom vents and add 2 fist sized pieces of sweet chestnut.
- Attach your slow roller system and your grill and slightly open the bottom vents.
- Now it's time to prep the turkey.
- Grate half a block of refrigerated butter onto a plate, add thyme leaves, orange zest and half a piece of nutmeg along with a couple pinches of salt and pepper.
- Start folding this mixture to get it all together then half the mixture into 2 small blocks.
- With your finger start separating the skin at the back of the turkey away from the meat. Be very gentle as you don't want to tear the skin.
- Take small bits of butter and push them into the cavity and work them down the bird.
- Once all the butter is under the turkey skin, start adding obscene amounts of salt and rub it into the skin, most of this salt will render off and make the skin nice and crispy. Then do the same with pepper but use a little less pepper.
- Place your turkey directly on the grill with a temperature probe inside the turkey.
- Leave the turkey for an hour then open your Kamado Joe and lightly baste the turkey.
- When your internal temperature probe in the turkey reaches 70C you can remove your turkey to rest for an hour and a half. Wrap in foil before you leave to rest.
- When the turkey is almost done resting its time to prepare some vegetables.
- Place a cast iron pan in your Kamado joe, once the pan has gotten really hot add some rapeseed oil, fennel seeds, sage leaves, carrots, brussels, salt and pepper.
- Drop the lid on the Kamado Joe for 5 minutes.
- Now add some butter into the pan, work that through and add some broccoli directly onto the grill.
- Once the broccoli is charred everything should be ready.
- Dish up and enjoy a very merry Christmas meal.
