Beef Chuck Chilli with Hasselback Potatoes

This beef chilli and hasselback potato combination is perfect for serving guests or just a nice dinner with family on those cold winter nights. It uses a piece of beef chuck – which is a cheaper cut, but because of the long, slow cook becomes really tender and gives your chilli much more flavour than just using mince.

Ingredients:

  • Chuck of beef
  • Onions
  • Salt
  • Fennel seeds
  • Garlic
  • Cinnamon bark
  • Dried chillies
  • Chipotle flakes
  • Plum tomatoes
  • Red wine vinegar
  • Dried coriander
  • Smoked paprika
  • Tomato puree
  • Cocoa powder
  • Two tins of kidney beans
  • A pint of beef stock
  • Large potatoes
  • Rapeseed oil

Instructions:

  • Indirectly cook your chuck of beef for 2 hours on your Kamado Joe BBQ at 150c.
  • After 2 hours has elapsed, remove the beef, get your Kamado Joe star shaped accessory rack, and fit it onto the BBQ
  • Place a large ceramic stock pot on top of the Kamado Joe accessory rack. 
  • Put a good amount of rapeseed oil in the pot and let it get hot.
  • Once your oil is hot its time to add onions, salt, fennel seeds, garlic, and a big chunk of cinnamon bark
  • Let the onions sweat down and then add chillies, chipotle flakes, plum tomatoes, a drop of red wine vinegar, dried coriander smoked paprika, tomato puree cocoa powder, and 2 tins of kidney beans with another pinch of salt
  • Begin working the chilli and add a pint of beef stock.
  • Finally add your beef chuck back into the chilli and place the lid back on the pot.
  • Close the lid of your Kamado Joe BBQ and leave to cook for roughly 2 and a half hours at 150c
  • After an hour has passed you can start prepping your hasselback potatoes.
  • Place a large potato into a tablespoon and slice downwards with your knife until your knife hits the edge of the spoon. This will allow you to quickly and precisely cut your potatoes without worrying about going too far. 
  • Now that your potatoes are somewhat fanned you can start adding rapeseed oil and salt making sure that you get the oil in between the cuts.
  • Massage your potatoes to make sure that they are completely covered in oil and salt.
  • Place your potatoes on top of the pot lid inside the Kamado Joe. and leave for an hour.
  • After that hour both your potatoes and chilli should be cooked.
  • Remove the pot from your Kamado Joe BBQ, take 2 forks and start pulling the beef apart and mixing it into the chilli.
  • Serve up and enjoy.
