BBQ Lamb Shoulder

Lamb shoulder slow cooked on a Kamado Classic, being licked with smoke!
Ingredients
- 1 lamb shoulder
- Herb and garlic butter
- Salt
- Pepper
Instructions
- First to prepare your lamb, score the top side well then add salt and pepper.
- Now add your herb and garlic butter, use whichever flavour you would like.
- Place into your Kamado Joe at 250F and leave it for 1-2 hours with a temperature probe inserted until the internal temperature reaches 150-160F.
- Once your meat has reached temperature, wrap it tightly in foil and put it back in your Kamado Joe Jr for another 3-4 hours with the temperature probe still inserted.
- Once the internal temperature reaches 200F it’s ready to come out.
- Now double wrap it in foil and leave it to rest for 2 hours.
- After 2 hours have elapsed it's time to dig in.
